Is there a way to change the contour interval? Every two degrees seems to get a bit cluttered.

This is going to be marked as "Not Planned." There are too many technological limitations which prevent this.
And the clutter depends on the resolution of the model. A higher resolution model will show more detail, more contours and thus appear more cluttered.
If there is a concrete proposal to reduce the interval for a particular model / product, that could be entertained. However Maps will not be able to support different contour intervals for each customer.
